Today I am making Mediterranean and Mexican style rolls made with homemade hummus.

Mediterranean style rolls ingredients: ( 10-12 rolls )
Flour tortilla – 2pcs
Feta cheese – ½ cup
Black olives – ¼ cup
Gyro meat – 6 slices ( I am using Trader Joe’s Gyro meat slices )
Baby spinach
Hummus – 1 cup ( I am using homemade hummus ) ( link to the recipe: https://www.youtube.com/watch?v=WG7l7aP0Ta8 )
Cilantro – 3 sprigs
Cucumber – ½ cup thin strips
Mexican style rolls ingredients: ( 10-12 rolls )
Flour tortilla – 2pcs
Black beans – ½ cup ( from the can, drained and rinsed)
Grilled chicken thighs – 1lb ( seasoning: cumin, ancho chili powder, garlic powder, mexican oregano, salt and black pepper…..or you can use other favorite seasoning )
Hummus – 1 cup ( I am using homemade hummus with roasted peppers ) ( link to the recipe: https://www.youtube.com/watch?v=WG7l7aP0Ta8 )
Shredded Mexican cheese – ½ cup
Green onion – 3 springs ( thinly chopped )
Bell pepper – 1 pcs ( cut thin strips )
Cilantro – 3 sprigs
Tomatoes – ¼ cup ( thinly sliced )
Baby spinach
For serving: salsa of your choice
Let’s start with Mediterranean style wrap:
Thinly slice cucumber and chop cilantro. Spread hummus to the edges of each tortilla. Now you can start layering all the ingredients. I am using Gyro slices from trader Joe’s, you only need to microwave them for 30 seconds.
Now you can tightly roll the tortilla. Roll it as tight as possible. Now you can cut it into 2 inch pieces.
This would be your perfect party food, work or kids lunch option.
Now, let’s make Mexican style rolls. First you need to marinate chicken. Ideally you will do it overnight, but if you are short on time you can season it, spray with oil and cook it right away in the Air Fryer on the chicken mode. When it is done, cut it into thin strips.
Now you can cut the rest of the ingredients: cilantro, green onions, bell pepper and tomatoes.
Now follow the same process of layering everything on the tortilla.
It is best to serve these rolls with salsa of your choice.
