FUNFETTI VEGAN MUG CAKE RECIPE:
DRY:
4 tbsp oat flour
1 tbsp coconut sugar
1 tsp baking powder
1/2 tsp baking soda
WET:
3 tbsp dairy-free milk
1 tbsp coconut cream or dairy-free yogurt
1 flaxseed “egg”
1 tsp vanilla extract
sprinkles
1.Whisk all dry ingredients in a microwave-safe mug.
2. Add in the wet ingredients (minus the sprinkles), and mix together. Then sprinkle in the desired amount of sprinkles.
3.Microwave your mug cake for 3 30-second intervals, ensuring that the cake doesn’t puff up too much. Allow the cake to rest in the microwave for 1 minute then serve with dairy-free ice cream or coconut whipped cream!
