INGREDIENTS & NOTES
#1 Korean BBQ Style Avocado Toast 0:00
300g plain tofu
1 tbsp cornstarch
⅓ tsp vegetable broth powder / vegeta seasoning
1 tbsp veg oil
¾ tsp gochujang (or to taste)
2 tsp soy sauce
1 tsp rice syrup or sugar
1 tsp vinegar
for the toast:
2-4 sliced bread of choice
1 avocado (or a few tbsp hummus/vg cream cheese)
optional: vegan feta, spring onion chopped, roasted sesame seeds
→ serves 1-2
#2 Spicy Lentil Pasta 2:44
2 small shallots
1-2 cloves garlic
1 tbsp olive oil
¼ – ⅓ tsp chili flakes (or to taste)
1 can finely chopped Italian tomatoes (400g = 14oz)
2 bay leaves
up to ½ cup (125ml) pasta water
1 handful basil
1 tsp sugar or maple syrup (or to taste)
generous pinch of salt (or to taste)
50 – 75g lentil pasta* (½ cup – ¾ cup)
50 -75g regular pasta (½ cup – ¾ cup)
2-3 handfuls fresh baby spinach
generous pinch of salt for the pasta water
*make sure the two pasta types roughly cook around the same time, a few min difference is okay!
serves 1-2
#3 Spicy Mango & Coconut Tofu Noodles 4:48
for the tofu:
400g firm plain tofu (14oz)
½ cup non dairy milk (125ml)
1 tbsp sriracha
1 tbsp white wine vinegar
1 tbsp soy sauce
½ cup (50g) shredded coconut
½ cup (60g) panko bread crumb
1 tbsp cornstarch
1 tbsp nutritional yeast
½ tsp salt or vegetable broth powder
1 tbsp vegetable oil, sprinkled over the breaded tofu
for the dressing:
2 ½ tbsp soy sauce
1 tbsp white wine vinegar
1 tbsp rice or maple syrup
1 tbsp olive oil
1 tsp roasted sesame seeds
2 tbsp water
175g noodles of choice (6.2oz)
½ mango, cut into thin strips
1 medium carrot, cut into thin strips
1-2 handfuls cilantro, minced
#4 Caesar Salad Toast 7:44
3 handfuls lettuce, chopped
for the dressing:
2 tbsp unsweetened soy yogurt
1-2 tsp olive oil
1 tbsp white wine vinegar
½ tsp mustard
pinch of salt
dash of black pepper
½ tsp rice or agave syrup
also:
2-4 bread slices of choice
hummus or vg cream cheese
~ ½ block smoked tofu, shredded finely (100g = 3.5oz)
optional: tomato or cucumber slices, pickled onions
serves 1-2
#5 Filled Vegan Omelet 10:08
1-2 small bell pepper
1 handful cremini mushrooms
~ ½ tofu (100g = 3.5oz)
oil for the pan
1-2 handfuls fresh spinach
for the batter:
60g glutinous rice flour
½ tsp baking powder
¼ tsp salt
¼ tsp kala namak (black salt)
100ml non dairy milk
2 tsp white wine vinegar
1 tbsp soft vegan cream cheese (or thick vg yogurt)
Sprinkle meal with a pinch of kala namak before serving!
