HOMEMADE CHICKEN NOODLE SOUP RECIPE –

Ingredients –
Meat of 2 Whole Chickens (6 Cups)
8 Carrots, Finely Chopped
10 Celery Sticks, Finely Chopped
2 Small Yellow Onions, Diced
8 Garlic Cloves
2 Tbsp Olive Oil
4 Tbsp Dried Thyme
4 Tbsp Dried Oregano
Salt and Pepper to your liking
6 Bay Leaves
16 Cups of Broth ( You can also substitute some with water)
2 Bags (16 oz each) Egg Noodles (Any noodle will do)

Method –
1. Prepare all your ingredients, chop, dice, mince, and cut! When using dried seasoning, use a large mortar and Pestle set to ground the seasonings (Thyme, Oregano, Salt, and Pepper). You can also buy these seasonings preground
2. Place a large pot over medium heat, coat the bottom with olive oil, and saute carrots, celery, onions, and garlic. Stir every few minutes to prevent burning and sticking. Do this until carrots are slightly softened (About 10 mins)
3. Bring the pot to high heat and add your ground seasonings, chicken, bone broth, water (optional), and bay leaves. Mix well.
4. Cover your soup and bring to a boil.
5. Once your soup reaches a boil, you will want to lower the heat and mix your choice of noodles (we used Wide Egg Noodles). Allow to simmer for 20 minutes or until the noodles are soft and fully cooked.
6. Allow to cool slightly, serve, and enjoy!
