Feeding 11 Kids: Healthy and Simple Breakfast Meal Idea
We are launching a new series to help you create Recipes and meals. As a busy homeschooling mom of 11, I go through a lot of food, so I work on meals that are not only delicious but satisfying and always kid-approved (well, that’s the goal)
You have to try this recipe; it is incredible! We always make Apple German Pancakes, but combining Apples and Berries with a touch of lemon is a game changer! It was delicious and wonderful!
Apple Berry German Pancake –
Ingredients:
24 Eggs
4 Cups Milk
4 tsp Vanilla
2 tsp Sea Salt Flakes
4 Cups All-Purpose Flour
2 tsp Five Spice
2 tsp Cinnamon
Zest of 1 Lemon
5 Apples, Sliced
2 Cups Strawberries, Sliced
2 Cups Blueberries
18-24 Tbsp Grass-Fed Butter (Depending on how much butter you want)
Toppings (opt):
Strawberries
Blueberries
Powder Sugar
Maple Syrup
Method:
1. Preheat oven to 425°F. Place cast iron skillet into oven while it preheats.
2. In a small bowl, soak the berries in water and vinegar, four parts water to 1 part vinegar, and set aside. Allow the berries to sit for 10 minutes while preparing the batter.
3. Take a large bowl, crack the eggs, and whisk them well.
4. Combine the milk, flour, vanilla, salt, five spices, cinnamon, and lemon zest into the large bowl of egg. Thoroughly combine the ingredients for the batter.
5. Set the batter aside and prepare the fruit. Drain the berries and rinse them thoroughly with water. Cut the strawberries and apples into thin slices. Set some of the blueberries and strawberries aside for later.
6. Remove the hot skillet from the oven and add all the butter. Allow butter to melt completely and coat the sides of the skillet.
7. Pour the batter into the skillet’s center, then add sliced apples and berries.
8. Place the skillet in the oven and bake for 30- 45 minutes or until golden brown and firm in the center.
– We use a 17″ skillet, so our cooking times may be longer. The center is a good key to watch; it will get firm as the batter is done.
9. Let it rest for 10 minutes, then serve with extra berries, powdered sugar, or maple syrup. Enjoy!
