🍽️ Why This Dinner Works

Today I am sharing a quick and easy diner classic! This smothered, chopped steak is inspired by a diner Rick and I loved in Flagstaff, Arizona called The Crown Railroad Cafe. They served a meal called the “Trucker’s Special” which was very similar to what I am sharing today. It was a favorite of Rick’s before we moved east. This is also a great Keto or low carb friendly option and you can serve what you like on the side to round it out for your own meal.

This all starts with a great chopped steak, AKA, burger. We love the Prime Rib burgers that our grocery store sells. They are 1/3 pound 80/20 beef burgers that cook up quick and taste amazing. Of course, you could do this with turkey if you wish. Top this with sauteed’ onions and mushrooms and melty colby jack cheese for a real diner throw back.

I like to fry off my burgers in a hot cast iron skillet then remove them to the side. You can sautee up your onions in the pan drippings. There is enough fat there to make the onions tasty but not too much to make them greasy. I sauteed my mushrooms separately because my younger daughter does not like onions at all. So when they were done I took some mushrooms out for her and added the remainder to the onions and let them all get friendly.

When the onions and mushrooms were perfectly done, soft and caramelized I pushed them to the outside of the pan and put the burgers in the middle, topped them with shredded cheese and topped them with the warm onion and mushroom mixture. Give this a minute to get melty and delicious then serve.

I served ours with more cheese on top, of course this is your choice and put sweet potato fries and green beans on the side. We really enjoyed this meal. It is super easy to throw together and really satisfying. Leftovers can be kept for up to three days and I recommend reheating in a skillet on top of the stove over low heat just until it is warmed through. Microwaving may give your burger a tough texture as well as burn the cheese.
