Bento box n1 :
– Tabouleh : cook couscous, let it cool down and then add diced tomatoes, shallots, parsley, cucumber, lime juice and salt.
– Wraps : Spread hummus on a wrap/tortilla, add few tablespoon of taboleh, and optional falafel (store bought or check out recipes!). Wrap it up like I’m showing you!
– Tahini dip : 1tsp tahini + lime juice and water to thin it out
– Bliss balls : mix of dates, coconut and oats
Bento Box N2
Chili sin carne : 1 onion, chopped, cooked with mexican spices till soft and fragrant. Add water if it sticks to your pan. Add frozen capsicum (or fresh), stir together. Add kidney (or black) beans, a can of tomatoes, more spices, and corn.
Serve with quinoa and a mexican salad (lettuce, tomatoes, corn, guacamole and tortilla chips)
– Homemade Tortilla chips : Cut a tortilla in triangle, spread it on a baking sheet and sprinkle some salt/spices on top (optional). Cook for 5 mins at 200C. Watch it doesnt burn!
Bento BOX N3
– OvenBaked Sweetpotato : rinse and make a cut in the potato. Cut the end bits and wrap it up in baking paper. Cook at 200/220C for 30-40 mins, till soft and caramelyyy!
– Greek salad : cucumber, olives, tomatoes, shallots, oregano, lime juice, olive oil and fermented tofu with herbs (buy or make you own!). Serve with pita and hummus!
