  1. Looks yummy! Charlie Brown would be proud! It is usually best to use organic anything but if I had to choose between organic vegies and fruit or organic meat and eggs i take the organic meat and eggs!

  2. To substitute eggs in this recipe you can use 1/4 cup of mashed banana or applesauce per egg. I have read pumpkin puree can also substitute eggs in such recipes but I haven’t tried it yet.

  3. This sounds gross but I don't like Chia seed and also happen to have an allergy to them so I have used baking soda + baking powder + apple cider vinegar in some of my baking recipes and it works! You would have to fool around with the amounts but I have used that combo with chocolate muffins, and other baked goods……

  4. I think to make this recipe vegan, I would just follow one of your oat muffin recipes, use one or two flax eggs, use probably more like HALF a cup of pumpkin, 1/4 cup of pecans and of cranberries. as far as gluten free, arent oats gluten free? anyhow, thats what i would do.

  5. Thank you so much Dani for thinking about us vegans as well 🌞 I would try to replace 3 eggs with banana mash/apple sauce and three eggs with flaxseed eggs. That should be both creamy in texture and hold the batter together at the same time.

  6. I was not watching this channel for about a year and came back to see you look way better then a year ago! What have you done? You look younger:)

  7. They look super delicious, I'm gonna try them soon. Although, can I use regular gluten free flour instead of coconut flour? Thanks! ❤️️

  8. For vegans: maybe add some psyllium fiber to help with the elasticity and the binding that the eggs provide? I'm not sure if this could work, but I believe it could be a good alternative.

  9. I was so excited to try this recipe but once you said that the chia eggs wouldn’t work okay this recipe I was let down 😢

I’m going to try the bass of another muffin recipe and just sub in with the extra ingredients and see if it works 🤞

  10. Hi Dani, I love pumpkin! These muffins look so moist. Thank you for working so hard to constantly bring us new recipes. I love that I can always come to the C&D community to find scrumptious recipes feed my body and soul. PS – thank you for teaching me how to use coconut flour🤗❤❤

  11. This looks amazing AND I can actually make this because it's made with coconut flour! It's also very low sugar considering how many muffins you make I think. Thank you a treat just in time for fall that I can enjoy 😊 (instead of watching everyone else in my house enjoy treats lol)

  12. Hi.good.afternoon

  13. I saw a vegan girl use psyllium husk in her muffins in place of eggs , she's a dermatologist on YouTube her name Dr. Dre I believe
